How can I tell if baking soda or baking powder has gone bad?

Baking powder may appear caked, a sign that it has absorbed moisture. 
 
If you're in doubt about the effectiveness of either, try the following: 

  • Baking soda: mix 1/4 teaspoon of baking soda with 2 teaspoons of vinegar and the mixture should bubble immediately.  If not, replace it.
  • Baking powder: mix 1 teaspoon of baking powder with 1/2 cup hot water and the mixture should bubble immediately. If not, replace it 

 
If baking soda doesn't bubble, you can use it as an odor catcher in the refrigerator or freezer.
